Steeped in a tradition, birria is a rich, warming & decadent dish that encapsulates everything wonderful about Mexican flavours. Originating from the Northern province of Jalisco where the Spanish introduction of goat and its meat became part of the diet and the richer spices were used to balance the strong flavoured goat meat. The name Birria in Mexico refers to stew and the spice blend and its variations have taken precedence. Or birria meat is marinated in an adobo made of blend of Guajillo Cascabel, Ancho and Morita, chilis, garlic, and herbs and spices including cumin, bay leaves, and thyme before being cooked in a broth (consomé).
